This makes kiwis taste as great as they look—even greater. The fresh taste of lime is sublime, and the colors are bright and true. Serve this with toasted Hot and Sassy Corn Bread.

  • 4 kiwis, peeled and trimmed
  • Zest of 1 lime, slivered

Method

  1. Quarter the kiwis lengthwise, and then cut them crosswise into ½-inch cubes.
  2. Combine the kiwis with all the remaining ingredients in a deep 2½-quart microwave-safe casserole, and stir well.
  3. Cook, uncovered, at full power (650 to 700 watts) for 5 minutes. Stir, return to the microwave, and cook until thick, another 6 minutes.
