Pineapple Chutney

This chutney can make a summer fiesta out of the simplest meal, such as lamb riblets or grilled fish. Just make sure you choose a ripe pineapple!

Ingredients

  • 2 cups diced fresh pineapple (½-inch dice)
  • cups sugar<

Method

  1. Stir all the ingredients thoroughly in a deep microwave-safe 1½-quart casserole.
  2. Cook, uncovered, at full power (650 to 700 watts) for 8 minutes. Stir, return to the microwave, and cook another 8 minutes.
  3. Allow the chutney to cool slightly; then cover tightly and refrigerate. It will keep for 2 days in the refrigerator.
