During the holiday season, when time is at a premium, prepare this luscious mincemeat—a rich combination of meat, fruits, and spices—in the microwave. It cooks up in a fraction of the time, leaving you plenty of extra to wrap gifts.

Ingredients

  • 1 pound lean stew beef, cut into 1½-inch cubes
  • 2 cups water

Method

  1. Combine the beef and water in a 2-quart microwave-safe casserole with a lid. Cover, and cook at full power (650 to 700 watts) for 20 minutes. Stir, turning the meat, recover, and cook until tender, another 20 minutes. Allow the meat to cool slightly, reserving any liquid.
