Clarified butter can be heated, without burning, to higher temperatures than regular butter.

Ingredients

  • 8 tablespoons (1 stick) unsalted butter

Method

  1. Melt the butter over low heat in a small heavy saucepan.
  2. Remove the pan from the heat and set it aside for 5 minutes.
  3. Using a spoon, carefully remove and discard the foamy white butterfat that has risen to the top. Spoon or pour off the clear liquid. This is the clarified butter. Discard the solids that remain on the bottom of the pan. Allow the clari
