Peel the papayas, remove the seeds, and cut the pulp into ¼- to ½-inch cubes. Place them in a medium-size bowl.
Carefully seed and finely chop the jalapeño pepper. (You should have about 1 tablespoon.) Add it to the papaya, along with the remaining ingredients. Toss together gently. Serve this salsa within 4 to 6 hours for a really fresh taste.
