This native tropical American fruit, with its sweet and tart flavor, adds a festive note to snapper, grilled chicken, or grilled shrimp.

Ingredients

  • 2 ripe papayas (about 1 pound each)
  • 1 fresh jalapeño or serrano pepper

Method

  1. Peel the papayas, remove the seeds, and cut the pulp into ¼- to ½-inch cubes. Place them in a medium-size bowl.
  2. Carefully seed and finely chop the jalapeño pepper. (You should have about 1 tablespoon.) Add it to the papaya, along with the remaining ingredients. Toss together gently. Serve this salsa within 4 to 6 hours for a really fresh taste.
