When the nights are long and cold, we need comfort food. What could be cosier than potato and cheese with a big helping of nourishing, wintery kale? I love this for a blustery Sunday night supper and enjoy any leftovers for breakfast on busy Monday mornings.

Ingredients

  • 1 small onion, sliced
  • 1 clove garlic, sliced
  • 2 medium potatoes, chopped into 1cm cu

Method

Preheat the grill to medium.

Place the onion, garlic, potatoes and 2 tablespoons of the olive oil in a 24cm ovenproof frying pan over a low-medium heat. Sauté for 10-15 minutes until the onions are browning and potatoes are softening, stirring regularly so they don’t burn.
