The Hotel Metropole, which once stood at the corner of Forty-second and Broadway in New York City, was well known for its eccentric clientele of bookies and cabaret performers. Essentially a nineteenth-century Cognac martini, the dry, almost-saline Metropole house cocktail is an elegant way to enjoy an old book.
Combine the Cognac, vermouth, and both bitters in a mixing glass filled with ice and stir until well chilled, 20–30 seconds. Strain into a chilled cocktail glass or coupe. Garnish with the cherries pieced together with a cocktail pick.
