This orange syrup works great as a mixer, but it is just as good diluted with club soda as a refreshing nonalcoholic drink (see note). It calls for an old English technique in which sugar is used to extract the essential oils and flavor from citrus peel to create oleo saccharum (oil sugar).
Using a vegetable peeler, remove the zest from the orange in wide strips and combine it with the sugar in a Mason jar. Using a wooden muddler or a wooden spoon, lightly mash together the zest and sugar.
