This drink is believed to be a variation on the John Collins, made with Old Tom gin instead of genever. That makes sense, given that genever is sweetened with malt wine and Old Tom is a sweetened gin. Here we stick with the modern interpretation, using London Dry gin and a hit of simple syrup.
Combine the gin, lemon juice, and simple syrup in a shaker. Add ice, shake hard for 8β10 seconds, and strain into a collins glass filled with ice. Pour in the club soda and stir briefly. Garnish with the lemon wedge.
