This drink is believed to be a variation on the John Collins, made with Old Tom gin instead of genever. That makes sense, given that genever is sweetened with malt wine and Old Tom is a sweetened gin. Here we stick with the modern interpretation, using London Dry gin and a hit of simple syrup.

Ingredients

  • 2 fl oz (60 ml) London Dry gin
  • Β½ fl oz (15

Method

Combine the gin, lemon juice, and simple syrup in a shaker. Add ice, shake hard for 8–10 seconds, and strain into a collins glass filled with ice. Pour in the club soda and stir briefly. Garnish with the lemon wedge.
