The word boxty is thought to come from the word bochty or bocht meaning poor. When milk and salt are added it is sometimes referred to as ‘dippity’. Here the boxty comes in the form of pancakes.

Ingredients

  • 8 oz (225 g) peeled raw potatoes

Method

Grate the raw potatoes and wring out in a clean cloth. Combine with all the other ingredients, adding the milk last until the whole is of a dropping consistency. Drop spoonfuls onto a hot griddle and eat very hot with lots of butter.
