Another excuse for eating garlic, if such a thing were needed. If you don’t like garlic, these skins could be eaten with a dip made of sour cream and chives, or avocado, or smoked fish or melted cheese.

For each person you will need the peelings of 4–5 large potatoes. Keep the potatoes for another dish. See that the peelings are very clean and dry and then pour over a good quality olive oil, turning them over so that each piece of peel has contact with the oil, but isn’t drowned. Se
