This is useful if you can combine the cooking with, say, a casserole that needs a longish time in the heat.


  • 1 lb (450 g) potatoes, peeled
  • 3 eggs
  • 2


In a bowl, beat the eggs well. Grate the potatoes and squeeze as much of the liquid out of them as possible.

Add all the ingredients to the eggs, put into a casserole dish and bake for 45 minutes at gas mark 4/350°F/180°C or until the top is golden.
