Cold Potato and Cucumber Soup

One of the simplest soups imaginable. Resist the temptation to include onions or herbs. The only addition may be a spoonful of cream stirred into each plate and a few chopped chives.


  • 1 lb (450 g) potatoes, peeled and diced
  • 1 cucumber, diced
  • Chicken or vegetable stock
  • Sea salt and freshly ground black pepper


Put the potatoes and the cucumber in a pan with enough stock to cover. Boil until the vegetables are tender. Season and liquidise or put through a sieve. Allow to cool before eating.

The Swiss Army once had a marching song that saluted the potato. It was called ‘Chanson des Pommes de Terre’.
