Boylan potatoes are named after the amateur cook who invented them.

He had never cooked potatoes before – or anything else come to that.

Ingredients

  • lb (700 g) new potatoes, cleaned
  • 4–6 tablespoons freshly made mint sauce

Method

Boil or steam the potatoes until tender. Slice and stir gently into the mint sauce.
