Any herb you like can substitute for the mint. These potatoes can be cooked in charcoal on a barbecue or put into the smouldering embers of a wood fire and left to cook slowly while you do something else. Instead of the usual large baking potatoes, try cooking bundles of new potatoes which will take less time to cook.

Prepare a double layer of tinfoil and brush the surface with oil. Place the cleaned potatoes and chopped herbs on this and fold into a packet. Cook for approx. 40 minutes, but this will depend on where you are cooking them. If you are using an oven, bake for 40 minutes at gas mark 6/400°F/200°C.
