Smoked Duck Breast, Rocket and Potato Salad

Wild rocket grows as a weed in our kitchen garden and is available almost all year round.


  • 1 lb (450 g) very tiny new potatoes
  • 3 tablespoons fruity olive or hazelnut oil
  • 2 tablespoons lemon juice
  • Sea salt and freshly ground black pepper
  • A large handful of rocket leaves
  • 4 oz (110 g) smoked duck breast


Steam the potatoes. Do not remove the skins but while still warm roll them in the oil, lemon juice and seasoning. Gently add the rocket leaves and place on the salad little pieces of the duck breast.

In The Diary of Edward Wynne the Welsh squire and agriculturalist reports that he brought potato seed from Ireland and in 1730 had three ‘potato gardens’.
