Use the smallest potatoes you can find, and they must have no knobs, or the spices will not cover them properly.


  • 2 lb (900 g) small new potatoes, cleaned
  • 2 oz (50 g) butter
  • 1 medium onion, chopped
  • 1 teaspoon chilli powder
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 2 teaspoons garam masala


    Heat the butter, add the onion and all the spices except the garam masala, and stir together for a few moments.

    Add the cleaned but unpeeled potatoes and, over a gentle heat, allow to cook until the potatoes are tender, shaking every few minutes so that the potatoes cook evenly. When nearly done, stir in the garam masala.
