Use the smallest potatoes you can find, and they must have no knobs, or the spices will not cover them properly.
Heat the butter, add the onion and all the spices except the garam masala, and stir together for a few moments.
Add the cleaned but unpeeled potatoes and, over a gentle heat, allow to cook until the potatoes are tender, shaking every few minutes so that the potatoes cook evenly. When nearly done, stir in the garam masala.
An old remedy for softening and removing blemishes from hands involves making a paste from cooked, mashed potato mixed with glycerine, a tablespoon of safflower oil and a few drops of rosewater. Apply to the hands, then leave for half an hour before washing off.
