Mash of Nine Sorts

Stwmp Naw Rhyw

This is based on a Welsh recipe that was traditionally cooked for Hallowe’en and served in a communal dish. Concealed in this mash was a wedding ring.


  • 8 oz (225 g) potatoes, peeled and diced
  • 4 oz (110 g) carrots, peeled and diced
  • 8 oz (225 g) turnips, peeled and diced
  • 8 oz (225 g) parsnips, peeled and diced
  • 8 oz (225 g) peas
  • 8 oz (225 g) leeks
  • 5 fl oz (150 ml) milk
  • 2 oz (50 g) butter
  • Sea salt and freshly ground black pepper


Cook the first four ingredients together in a little salted water until soft, drain and purée. Cook the peas and, using a potato masher, add to the purée.

Cook the leeks in the milk until they are soft (about 5 minutes) and then mash into the other vegetables. Add the butter and season.
