This is based on a Welsh recipe that was traditionally cooked for Hallowe’en and served in a communal dish. Concealed in this mash was a wedding ring.
Cook the first four ingredients together in a little salted water until soft, drain and purée. Cook the peas and, using a potato masher, add to the purée.
Cook the leeks in the milk until they are soft (about 5 minutes) and then mash into the other vegetables. Add the butter and season.
