The Potato Year

I make no claim for this diet. It comes from a Scandinavian health clinic and it is based on potato water only. It is said that not only do you lose weight but you have a beauty treatment, resulting in a soft, smooth and supple skin. If you are in good health, 24 hours on it would, at least, give your stomach a rest after the Yuletide binge.

Boil about 2 lb (900 g) well-scrubbed potatoes in approx. 2Β½ pints (1.4 litres) of water. The actual duration of boiling should only be about 5–6 minutes, by which time all the natural goodness – Vitamin C and starch – will have been extracted into the water.

The water is then allowed to cool and, before drinking it, finely chopped parsley or some other herb can be added for flavour. The 2Β½ pints (1.4 litres) should be shared out to last a day and nothing else consumed at all.

β€˜We praise all the flowers that we fancy

Sip the nectar of fruit ere they’re peeled

Ignoring the common old tater,

When, in fact, he’s King of the Field.

Let us show the old boy we esteem him

Sort of dig him up out of the mud;

Let us show him he shares our affections

And crown him with glory – King Spud.’
