Making sushi at home is a wonderfully presumptuous thing to do, but who cares? You can have a lot of fun and give a lot of pleasure, and maybe get some insight into the professional skills that a top chef must have in a famous Tokyo sushi bar.
But this is the very top end of the sushi market, and for the average person eating sushi is a more prosaic experience. Two Japanese friends invited me to their local, which they described alluringly as ‘automatic sushi bar’. Were robots repla
