Creamy, cool, and slightly sweet, this soup makes a deliciously light lunch for a late-summer afternoon.

Ingredients

  • 2 eggs, well beaten
  • cup sugar
  • 1 tablespoon vanilla ex

Method

  1. Combine the eggs, sugar, vanilla, lemon juice and jest, and mango in a food processor, and process until smooth.
  2. Whisk the cream and milk together in a large bowl until frothy. Slowly add the mango mixture, whisking constantly.
  3. Cover and chill well.
  4. To serve, stir, ladle into chilled bowls, and garnish each serving with the blueberries and c
