This delicate sauce is perfect over angel hair pasta.


  • cups heavy cream
  • 4 tablespoons (½ stick) unsalted butter
  • ½ teaspoon salt
  • teaspoon freshly grated nutmeg
  • Pinch of cayenne pepper
  • 1 cup finely chopped mixed fresh herbs [our favorite combination is basil, mint, watercress, Italian (flat-leaf) parsley, and chives]
  • ¼ cup grated Parmigiano-Reggiano cheese


    1. Combine the cream, butter, salt, nutmeg, and cayenne in a heavy saucepan and simmer until the sauce is slightly reduced and thickened, 15 minutes.
    2. Whisk in the fresh herbs and the cheese and simmer for another 5 minutes. Taste and correct the seasoning. Serve immediately.
