  • 1 chicken ( to 3 pounds), quartered
  • 2 teaspoons herbes de Provence


  1. Arrange the chicken in a bowl just large enough to hold it. Sprinkle on the herbes de Provence, season with salt and pepper, and pour the buttermilk over the chicken. Marinate, covered, in the refrigerator for 2 to 3 hours, turning occasionally.
  2. Preheat the oven to 350°F
