This complements combinations like the Smoked Turkey Salad but is also delicious on a chicken sandwich or served as a dip for crudités.


  • 1 whole egg
  • 2 egg yolks
  • 1 tablespoon Dijon mustard


  1. Combine the whole egg, egg yolks, mustard, and vinegar in a food processor, and season with salt and pepper. Process for 1 minute.
  2. With the motor still running, dribble in the oil in a slow steady stream.
  3. When the oil is completely incorporated, shut off the machine, scrape down the sides of the bowl, taste the mayonnaise, and correct the seasoning. T
