  • 1 egg yolk
  • cup red wine vinegar
  • 1 tablespoon sugar


  1. Combine the egg yolk, vinegar, sugar, garlic, and salt and pepper in a food processor. Process briefly.
  2. With the motor running, slowly dribble in the olive oil.
  3. Taste, correct the seasoning if necessary, and transfer to a storage container.
