Lemon Icing

Ingredients

  • 1 pound confectioners’ sugar
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 3 tightly packed tablespoons grated lemon zest
  • ½ cup fresh lemon juice

Method

Cream the sugar and butter together in a mixing bowl. Mix in the lemon zest and juice; spread on the warm cake.
