Another afternoon cooler, this one with the special taste of Campari, Italy’s bright red, bitter apéritif.

Ingredients

  • 3 cups strained fresh orange juice
  • 1 cup Campari
  • Juice of 1

Method

  1. Combine all the ingredients in a heavy saucepan and set over medium heat. Stir constantly until the mixture is about to boil and all the sugar is dissolved.
  2. Cool to room temperature. Pour into a shallow pan (an 8-inch square cake pan is ideal), and set in the freezer.
  3. The mixture will take from 3 to 6 hours to freeze and, because of its relatively low
