  • 1 set of calf's brains
  • 1 egg
  • 1 tablespoon cracker crumbs

Method

Remove red membrane and soak the brains in cold water 20 minutes. Drain and chop fine, add egg, crackers and seasoning. Spread 1 heaping tablespoon of this mixture on each round of bread and fry a golden brown in deep hot fat.
