Iced water, rice flour and quick mixing are the ingredients for tempura batter. It does not matter if there are small lumps of flour in the batter, which – above all – should not be over-mixed or it will become heavy.


  • 250 ml/9 fl oz iced water
  • 2 egg whites
  • 150


Whisk the egg whites and water together, then quickly whisk in the flour.

Dip in the flowers and proceed as above.
