Any recipe that requires sugar to be cooked to the caramel stage is slow, hot work, so it is worth getting up early to make these if you don’t want to sweat over a hot stove on a summer’s day. The idea of substituting lavender for nuts came to me when making the lavender nut crunch and I then wondered about stirring the flowers into hard crack caramel, letting it harden on a marble slab and crushing the result or serving it as a sweetmeat. And so from ther
