  • 1 lb unripe large green mangoes
  • 4 sticks cinnamon
  • tsp chilli powder
  • ½ pint water
  • cup granulated sugar
  • 5 cloves
  • ½ tsp salt


  • Grate the mangoes and boil in the water for about six minutes.
  • Drain the fruit and return water to the pan.
  • Add sugar and spices to the water, and cook until the syrup is sticky.
  • Add mangoes, and carry on stirring and cooking until thick.
  • Stir in chilli powder and salt; cook for a couple more minutes.
  • Cool and store in sterilized airtight jars.
  • Terrific with everything, especially eggs on toast.
