Ingredients: 1 cup yogurt sauce; 200 g/7 oz/1½ cups plain/all-purpose flour; ½ cup mint chutney with Garlic; 500 ml/17 fl oz/2 cups oil, for deep frying; 1 tsp cumin seeds; Pinch of asafoetida (hing); 35 g/1¼ oz/¼ cup peas, boiled; 280 g/10 oz or approximately 2 medium potatoes; ¼ tsp salt; 4 tbsp oil; 1½ tbsp oil; 2 green chilies, finely grated; ¾ tsp garam masala; ½ tsp red chili powder; 1 cup tamarind chutney; 2 tsp mango powder (amchur powder, readily available at Indian supermarkets); Large handful of cilantro/coriander, thick stems removed and leaves chopped; 4 tbsp chopped cilantro/coriander; 60 g/2 oz/¾ cup sev; 1 small red onion, chopped; 4–5 tbsp pomegranate seeds (optional); ½ tsp salt

We take samosas everywhere we go. In June 2019, my daughter Elissa invited the whole family to celebrate a big day in New York. She was opening a fashion store in the West Village. We would be flying from California to be there. As we were preparing for the trip, I texted Elissa to ask her if I could bring along 60 samosas, a popular and delicious Indian appetizer, for her event. She declined, firmly lecturing me: “Mom, you are traveling 2,500 miles on a plane. You cannot b
