Method

Serve this along with taramasalata for an unusual start to a meal.

Wipe the aubergines and place in a baking or roasting tin. Set in the centre of a hot oven 400°F, 200°C or Gas No. 6) and bake for 30–40 minutes. Turn occasionally, the aubergines will feel quite soft when ready. Remove from the oven and cool until warm enough to handle. Cut in half len
