Brodo colorito means “colored broth” and refers to the reddish hue the tomato paste gives this soup. The flavor is simple, direct, and satisfying. The broth is neither a homemade meat broth nor made from bouillon cubes; it is created from the combination of flavors in the soup. The shape I like best here is a short tubular soup pasta, smaller than what one usually thinks of as maccheroni, though at one time in Naples, maccheroni was simply a generic term for pasta.
