Boscaiola means “woodsman style,” and this is the classic sauce that one would make after a successful mushroom-hunting expedition. Dried porcini are used here to give the cultivated mushrooms some of the depth and flavor of wild mushrooms. Cremini are marginally better than white mushrooms, though both are fine. If you can get fresh shiitake mushrooms, you can also use a combination of white or cremini and shiitake mushrooms.
