These oriental-inspired fritters come with my take on the Japanese ponzu dipping sauce, which is a sweet-sour-salty combination of citrus juice, soy sauce and brown sugar.

Ingredients

  • 185 g / oz firm tofu, drained, patted dry and coarsely grated
  • 200 g /7</

Method

  1. Squeeze the grated tofu in a clean tea towel to remove any excess water and tip into a bowl with the peas, 5 of the spring onions, garlic, ginger and chilli flakes and mix together.
  2. Put the flour in a separate bowl, make a well in the centre and add the beaten eggs. Gradually mix the eggs into the flour until you have a thick, smooth batter, then stir in the pea m
