The tamale pie hails from the American south and is effectively a pie with a cornbread crust. I’ve gone for a spicy mushroom filling with tomatoes as the base of the sauce. While it seems a lot of mushrooms, they soon cook down.

Ingredients

  • 750 g (1 lb 10 oz) chestnut mushrooms (or wild mushrooms when available), sliced

Method

Preheat the oven to 200°C/180°C fan/390°F/gas 6.

Heat a large saucepan over a medium heat. Add the mushrooms and dry fry them, stirring often, until they’ve released their liquid and that has evaporated. Drizzle in 2 tablespoons oil and fry the mushrooms until br
