Method

Combine the chicken wings with the salt, garlic and sake in a bowl, working it into the meat with your hands. Cover and leave to marinate in a cool place for at least 1 hour. If it will be more than an hour before you cook the chicken, put it in the refrigerator. Cut the wings in 2 at the joint.
