This recipe is based on one of Michel Guérard’s and is a very simple way of preparing lobster. It is preferable to grilling as it renders the lobster far more moist and tender.

Soften the butter and combine in a bowl with the other herb butter ingredients. Put the herb butter into a piping bag equipped with a nozzle that has a plain, 1-cm diameter hole. Place the bag in the refrigerator and leave for 45 minutes.
