Prepare the lobster. Cut the tail into five pieces and separate the legs. Place in a large pot with all the other ingredients, bring to a rapid boil and cover with a tight lid. Boil for seven minutes.
Serve sprinkled with fresh coriander in a large tureen, accompanied by a green salad.
