  • 5 grams gelatin sheets, bloomed in cold water, squeezed dry
  • 40 grams whole milk

Method

Blueberry Lavender Mousse

Bring the milk, salt and lavender to a simmer, take off the heat and whisk in the gelatin.

Strain out the lavender then add in the confectioners’ sugar and blueberry purée. Whisk thoroughly after each addition and cool to room temperature.
