Sweet Potato Bisque

  • 4 pounds of sweet potatoes, peeled, sliced
  • 6 quarts of water
  • ½

Method

Sweet Potato Bisque

Place water, sweet potatoes and salt in a large pot. Boil until the sweet potatoes are tender. Strain and reserve the water. Purée the potatoes in batches with the sweet potato water (twice as much water as potatoes by volume). Place blended soup back in pot and bring to a simmer. Add maple and brown sugar. Hold on low heat.
