  • 6 duck legs
  • ¼ teaspoon cinnamon
  • Pinch of ground nutmeg

Method

To Cure the Duck Leg

Combine spices. Clean and partially debone (remove thigh bones) from the duck legs.

Coat with kosher salt and combined spices. Let sit overnight.

To Cook the Duck Leg

Duck fat, as needed to cover legs.

Next day, bring duck fat up to room temperature.
