Rabbit Leg Confit

  • 8 hare or rabbit legs (see Rabbit Rack for 4 of the legs)
  • 1 teaspoon achiote paste

Method

Rabbit Leg Confit

Rub legs with achiote paste.

In a small bowl, combine salt, sugar, cumin, coriander and paprika. Cover legs with the spice mixture and let cure in the refrigerator overnight.

Preheat oven to 300°F.
