Coloured with red pepper, perfumed with ginger, browned in melted butter, prepared with mutton, chicken or even a turkey. To vary the following recipe, potatoes fried in butter may be added, or half a pound of peeled almonds fried in butter. Sometimes, just before serving, the dish is garnished with eggs fried in butter.

Ingredients

  • 4 ½ lb shoulder and cutlets of mutton cut into three or four pieces
  • A large pinch of powdered ginger

Method

Choose a fat piece of mutton, shoulder and cutlets. Divide into three or four pieces. Pound the saffron with a little salt, dilute with a few tablespoons of water and rub the mutton well with this golden p
