One of the trendiest restaurants in San Francisco is Betelnut, an Asian beer-house restaurant with a very tempting and satisfying menu. A particular vegetarian side dish I very much enjoyed at Betelnut is this one. It uses fresh sweetcorn, which is a relatively new food in Chinese cuisine, having been introduced but 300 years ago. The dish is similar to, but not as explosive as, a stir-fried corn dish I had years ago in Sichuan, china. Simple to make, it needs the freshest, sweetest corn.</
