Corn is perhaps one of north America’s greatest contributions to the world of food. It is especially good when quickly grilled and served with butter. In this recipe, I offer an alternative to plain butter, spicing it with Asian flavours for an easy, vegetarian dish.

Method

In a bowl, mix the butter, spring onions, ginger, salt and Sichuan peppercorns together using a wooden spoon. Put the mixture in the refrigerator.

Pre-heat the oven grill to high or make a charcoal fire in the barbecue. Soak the corn cobs for 10 minutes in cold water but leave
