Łatwy Barszcz


  • 12 medium beets
  • 1 qt. water
  • 1 tablespoon sugar
  • Salt and pepper
  • 1 medium onion, sliced
  • Juice of 1 lemon
  • 2 cups bouillon


Wash and peel the beets. Cook beets and onion in water until beets are tender. Add juice of lemon, sugar, salt and pepper. Let stand over night. Strain. Add bouillon (made by using 2 bouillon cubes and 2 cups of hot water). Chill thoroughly and serve in' cocktail glasses.
