Pound veal chops, salt, pepper and dredge with flour. Add water to egg and mix lightly with fork. Dip chops in egg, then in crumbs, and fry. Be sure to use part butter in frying the chops for no other meat absorbs the flavor of butter as veal does because it is a lean meat. When chops are nicely browned on both sides, add cream and set into oven for 30 minutes at 350°.
