Chicken Baked in Sour Cream

  • 1 roasting chicken
  • ¾ cup sifted flour
  • 1 egg
  • 1 cup bread crumbs
  • 3 tablespoon water
  • 6 tablespoon butter
  • 2 cups sour cream
  • Salt and pepper


Beat egg slightly and add cold water. Cut chicken in pieces. Dip in flour, egg and water, and dip in bread crumbs. Brown in butter. Remove to baking pan, sprinkle with salt and pepper and set in 375° oven. Heat sour cream to liquefy. After half hour of baking, pour a little hot sour cream over each piece. The cream will immediately soak into the chicken. In 15 minutes pour more sour cream and so on until all has been added. Bake chicken 1 ½ hours. The chicken will absorb all the cream.

To make gravy, remove chicken. Place 2 tablespoons of butter in roasting pan. Add 2 level tablespoons flour and mix until smooth. Add 2 cups milk. Stir constantly to dissolve all browned juice in pan. Allow to simmer 3 to 4 minutes.

This is a good way to cook game such as pheasant or young rabbit.
